Garden State Cake Competition

This cake was designed for the First Annual Garden State Cake Competition. The theme was "Summer Fun". Growing up near the beach that meant sun, sand and water.

The sun was made from Mexican paste. The sand castle was 3 cakes stacked together and then carved with spiral staircase. I've loved this effect since I first saw it on Kim Payne's award winning cake. She was generous enough to share her technique with me. Thanks!Kim!. The "water" tiers were carved using a technique I learned from Colette Peters. I was able to carve the bottom and tops of the cakes to give a wavy feel to the cakes. I used Isomalt coral, chocolate seashells, and gumpaste details for all the undersea creatures. This cake took First Place in the Professional Division. Ahhh...can't wait for summer.
